Almonds have a mild, 'clean' and elegant taste. Their 20% fat content is mainly from mono-unsaturated fatty acids like oleic and palmitoleic acids that help to lower LDL or "bad cholesterol" and increase HDL or "good cholesterol." Research studies suggest that Mediterranean diet, which is rich in mono-unsaturated fatty acids helps to prevent coronary artery disease and strokes by favouring healthy blood lipid profile.

Almonds are an excellent source protein (20%) and they are also impressive in vitamin E content: 25mg per 100 g (about 170% of RDA). Vitamin E is a powerful lipid soluble antioxidant, required for maintaining the integrity of cell membrane of mucus membranes and skin by protecting it from harmful oxygen free radicals.
Almonds are obviously gluten-free and there are fabulous recipes that pack these nutritious little powerhouses into divine cakes and crusts. When it comes to nut allergies, they are LESS allergenic than other tree nuts, especially when blanched (the astringent brown skin removed). They are also very digestible when made into ALMOND MILK: soak 1/2c overnight, straight in  the blender. Blend in the morning and strain through a cloth or nylon bag, squeezing out as muchliquid as you can. The remaining can be made into cake bases or pizza crust, and dehydrated in a food dehydrator. Not an iota of this needs to go to waste.
Almonds contain B-complex groups of vitamins such as riboflavin, niacin, thiamin, pantothenic acid, vitamin B-6, and folates. These vitamins functions as co-factors for enzymes during cellular substrate metabolism and are supportive of the nervous system.
They are also rich source of minerals like manganese, potassium, calcium, iron, magnesium, zinc, and selenium.
