Gluten-Free Rotis

GF Rotis – makes 8 small rotis


½ c each of 3 different kinds of flour e.g. rice flour, millet flour, chickpea flour, tapioca flour, quinoa flour etc.
1/3 c coconut cream 
1 teaspoon xanthan gum 
1 teaspoon palm fruit oil, pinch of salt, water


1. Mix all ingredients together to form a fairly stiff dough

2. Knead a little and roll into balls (approx. golf-ball sized)

3. Roll into flat circular shapes

4. Dry fry for a few minutes each side until browned

5. Serve immediately - or freeze once cool and then reheat in the pan or under grill as required.
