Miso Soup

Millions of Japanese can’t be wrong! In Japan, miso soup is eaten for breakfast!

We recommend it as a light supper, or mid-morning cuppa soup, or when you’ve got the ‘flu, or are convalescing. Miso soup is very therapeutic and works when your body does not have the energy to digest much. This recipe is for one serving.

Barley miso is used for general good health and rice miso is used when you a little more laid up, when you really need to be energized.

Pour one bowl of water into a pot and heat up.

Meanwhile chop approx. one cup of vegetables, e.g. carrot sticks, broccoli and cauliflower roses, green beans, sugar snap peas, zucchini slivers – your choice.

Drop them into the water; add 1 Tsp nori or dulse seaweed, cut a little smaller than in the packet with kitchen scissors. Add a grating of fresh ginger. As these simmer for 2 – 5 minutes, cube 1/3 packet Earth Products tofu and add to the pot.

Place 1 dessert spoon of barley or rice miso in your serving bowl; add small amounts of hot water from the pot to thin out and then empty the pot into your bowl. This is now ready to eat! If you want this to be more filling, have a bowl of brown rice with it.

(Remember to never boil miso.. Miso is a natural source of probiotics and helps the digestive system manufacture B12; cooking would invalidate these health benefits!)
