Rice Flour Crumpets

15 min/ 5 min prep - makes 6 crumpets

cup brown rice flour 

1

ts baking powder

1

ts psyllium husk

1/2

ts xylitol

1

ts sprouted flax  

3/4

cup cooked brown rice

1

cup soymilk or water

2

TS coconut cream

  1. preheat nonstick pan.
  2. combine rice flour, baking powder and sugar.
  3. stir in the rice & toss to coat.
  4. separately, combine milk or water & coconut cream.
  5. pour into the flour mixture and mix just until combined.
  6. do not beat or overmix.
  7. spoon onto skillet.
  8. cook until tops are bubbly and edges are brown.
