Tofu Schnitzel

Slice a 400g piece of tofu in 3 slices and slice each slice diagonally again. Grate ginger and garlic (optional). Make 2 holes into each schnitzel and embed the ginger-garlic mixture. Blend 2TS olive oil, 2 TS soya sauce, 1 ‘thumb ginger and 1 bushel coriander in the blender. Brush baking tray with olive oil, place tofu schnitzels on top and cover thoroughly with sauce. Bake 20 mins at 160 o.
