I have come across coconut milk that contains E466. When I researched it I found it basically is cellulose like the fibre in vegetables which sweep the colon and reduce cholesterol. E466 is made from wood.Whilst wood is not something really edible it at the same time is not something really averse to human nutrition. Also xylitol, a low GI sweetener, is made from wood and so is MSM, famous for detoxing, lowering acidity and strengthening hair, skin and nails.
The maximum content of E466 in coconut milk is 1% to create a more homogeneous product. I don't find anything particularly wrong with it.
